Seattle’s food truck scene has been spreading across the city for years, speeding through every neighborhood by popular demand with no apparent intention of braking.

Found in the region’s bustling breweries, parks, and street corners, some of the more successful trucks have even taken root to become full-fledged stationary restaurants in the city. And with more residents on the go after the state fully reopens due to COVID-19 restrictions, these four-wheeled grocery vans provide a quick bite on the go.

From fresh poke bowls to Pakistani street food, here are 11 of Seattle’s best food trucks to track down this summer before they head to their next destination.

Away from the rez

Anyone familiar with Fry Bread Tacos knows this truck is worth chasing after. As one of the few restaurants in Seattle, Off the Rez has won a legion of loyal fans who serve Indian tacos on flatbread with toppings such as BBQ pulled pork or beef chili. Make sure you have a wet napkin on hand as these tacos can get messy.

If you can’t find your truck, you can stop by their stationary cafe at the newly opened Burke Museum.

These are not the sandwiches you used to get in a brown paper bag at school. Owned by husband and wife, this food truck prides itself on using responsibly sourced, seasonal ingredients to prepare “elevated” sandwiches like the “Precocious Piggy,” which features slow-fried pork belly, pickled onions, and pepper jelly on a toasted challah bun .

The truck also has plenty of vegetarian-friendly options, such as the “Bouquet of Brassicas,” which includes fried cauliflower on a fennel salad and aioli.

One of Seattle’s nationally acclaimed food trucks, Where Ya At Matt focuses on New Orleans flavors with bites like shrimp po’boys, red beans and rice, shrimp and grits and fritters dusted with powdered sugar.

Because who doesn’t love a food truck dedicated to two of Seattle’s favorite things? The Seattle Barkery pours out cups of coffee and homemade treats for four-legged friends, and travels the Seattle area to care for pups and owners.

A newcomer to Seattle’s donut scene, this plant-based donut truck opened in the Ballard neighborhood in April and sold out from pre-orders on the first day. The queer food truck serves exciting vegan flavors like a maple-glazed “Faconator” donut with smoky coconut bacon and a mango-glazed donut sprinkled with tagin.

“Our goal with Dough Joy is to bring something new, exciting, and delicious to the Seattle community,” wrote co-owner Sean Willis. “Plant-based or not, we believe you will love our delicious creations that are better for people, animals and the planet.”

This food truck only opened two months ago in Bellevue and is already causing a stir with its authentic Pakistani street food – and long lines. Expect crispy samosas served in a chickpea curry, chapli kebab burger with refreshing chutney, and paratha rolls. Beanfish is even featured on Japanese television and is the country’s only mobile supplier of taiyaki, or delicious fish-shaped waffles. And they have something for everyone. Whether you opt for hearty fillings like Korean veal or Japanese curry and ramen noodles, or opt for a sweeter bite with fillings like fruity pebbles or custard, these waffles are a street food staple in Seattle. A new stationary location is also to be opened in the Uwajimaya Food Hall this summer.
