Last year, the holiday season looked different due to the COVID pandemic. But things are looking a little happier this year as two pop-up bars return to Seattle on public holidays.

Miracle, a Christmas-themed pop-up cocktail bar known for its over-the-top festive decorations, returns to the local Rob Roy pub. The modern enclave is transformed into a nostalgic holiday oasis with twinkling lights, vintage garlands and a special playlist that creates a festive Christmas mood.

This year’s menu features favorites from the past and some new Miracle brews. The Christmapolitain with vodka, elderflower, dry wormwood, cranberry sauce, lime, rosemary, absinthe mist is at the top of the menu again, as is the Christmas Carol Barrell (reposado tequila, coffee liqueur, dry curacao, spiced chocolate, aromatic bitters, orange bitters) and the Yippie Ki Yay Mother F **** r! (Barbados Rum, Rhum Agricole, Trinidad Overproof Rum, Ube and Coconut Orgeat, acid-adjusted pineapple juice).

Other drinks on this year’s menu will have recipes reinterpreted, such as the Jolly Koala, On Dasher and SanTaRex. But it is the new Elfing Around cocktail made from prosecco, gin, mulled wine reduction, grapefruit bush, aromatic bitters, orange bitters that promises a holiday hit.
