Getaway: Eat and Drink to Transport You is the latest from the renowned chef and restaurant owner. # k5evening
SEATTLE – Chef Renee Erickson has done a lot more in the last three years than just running her many restaurants and creating typical fish dishes.
She also managed to write a cookbook which is also part of the travelogue. “Getaway: Eating & Drinking to Transport You” takes you around the world, but is also firmly rooted in the Pacific Northwest, right down to the book cover.
“The cover was actually shot at my people’s house. We have a cabin on the Salish Sea near Marysville,” said Erickson.
Erickson’s first cookbook, “A Boat, a Whale, and a Walrus” is a pantry staple. Short vacation is also for everyone who wants to travel the world in their own kitchen.
“The book was inspired by six places that were really important to me as a chef,” said Erickson. “Rome, Paris, Normandy, London, Baja California / Mexico and Seattle.”
Erickson visited all of these places for the recipes in this book. Notice that Seattle makes their list.
“I think Seattle is often where people come to be anywhere else in the Pacific Northwest, and I really hope people just stay here and visit what is so fabulous about where we live.”
“Evening” met with Chef Erickson at her Westward restaurant, a local retreat on the shores of Lake Union, where she made a local recipe: local Baywater Sweet oysters with fermented chili butter, cooked in a wood-burning oven.
The book also reflects Erickson’s many creative influences – from whimsical illustrations by Jeffry Mitchell to photos of her people in her northwestern homeland. Ever wondered where this cook got her seafood references from? There’s a great photo in the book of her mom digging clams.
“I grew up here, so I was born and raised in the Pacific Northwest and spent a lot of time on the water.”
