On this week’s food news, some popular Seattle establishments are returning, including the College Inn Pub, Volunteer Park Cafe, and Portage Bay Cafe. In addition, Katsu Burger is opening a new location in Kent, Molly Moon is starting a collaboration with Glossier and a local chef is cooking food for astronauts. NEW OPENINGS AND RETURNS

College Inn Pub
Rejoice: After being closed for 16 months, the historic College Inn Pub reopened its doors on July 15th for Seth Howard (owner of The Collins Pub, Last Drop Bottle Shop and Draft Punk), Al Donohue and Jen Gonyer. The team intends to keep the spirit of the original pub but have given it a few TLCs, including a thorough clean, updated electricity and plumbing, new kitchen and bar fixtures, and reconditioned woodwork. They have also brought back all of the original menu items with the exception of the Bagel Dog (due to sourcing issues and the elimination of microwave menu items), along with a few new ones, such as pizza bread with homemade marinara. The beer menu has also been expanded to include beers from local breweries such as Cloudburst, Ravenna and Maritime. Charles Mudede writes: “On a recent visit to the wood-rich basement bar, I ordered a Hot Italian Grinder from the pub’s menu. This was my favorite item in the former College Inn pub, and my question was just this: Has the HIG changed under new owners? In terms of taste, it was similar to before: very simple, moderately meaty and in the right size (not too big and not too small). My love for the mill was renewed. There is hope for the world after the pandemic. “

Volunteer Park Café and Pantry
The iconic Capitol Hill parent company Volunteer Park Cafe, which closed last fall and bought by local architect and winemaker James DeSarno, reopened last Wednesday and two Canlis alums are running the show. Former Canlis expediter Melissa Johnson runs the café, while former Canlis pastry chef Crystal Chiu is in charge of the baked goods. (If you’ve tried one of the bagels at Canlis’ short-lived pandemic pivot bagel shop last year, you already know their job, and yes, they will appear on the menu occasionally.) Coffee shop, bottleshop, and corner market selling natural wine and merchandise for sale from local suppliers. The new menu includes New York-style breakfast sandwiches, seasonal toasts, vegan chocolate and hazelnut cakes, strawberry and rhubarb galettes and chocolate babka.

FUTURE OPENINGS

Dorothy’s piano bar and cabaret
It’s time to polish your interpretation of “Maybe This Time”: A new piano bar and lounge will soon fill the former highline space. Founder John Lehrack previously ran Dorothy’s as a traveling piano night in places like the Re-Bar and Lumber Yard Bar. An opening date has not yet been set.

The Seattle chef is leading the team to develop a menu for NASA’s Mars missions
Local chef Young Cho, best known for his Asian Tex-Mex catering company Phorale, has put together a team called Ad Astra to compete in a competition called the Deep Space Food Challenge, which is being held in coordination with NASA and the NASA is looking for solutions for the nutrition of astronauts by the Canadian space agency. The challenges posed by this venture are unique to say the least, as food consumed in space requires a longer shelf life and must take into account the physical stresses of space on astronauts’ bodies. The upcoming Wunderground Cafe starts pop-up
As we previously reported, Cupcake Royale owner and entrepreneur Jody Hall is launching a new startup called Wunderground that will sell a blend of adaptogenic mushrooms and coffee beans and convert Cupcake Royale’s former Capitol Hill location into Wunderground’s flagship coffee shop. Meanwhile, Hall is opening a pop-up on Chophouse Row serving adaptogenic coffee beverages Wednesday through Sunday. It appears that the Cupcake Royale location on Capitol Hill has moved to Chophouse Row along with the pop-up.
